Summary:

The Sebastian Vail is seeking a skilled Sous Chef to join our culinary team. You will be responsible for providing efficient and cost-effective food service to our hotel food outlets while maintaining or exceeding our high-quality standards.

Employment Type:  Full Time, Year-Round

Start Date:  ASAP

Pay Rate:  $70,000/Year, plus 5% annual bonus potentia

Schedule:  Flexible schedule. Must be able to work evenings, weekends, and holidays when needed.

Key Responsibilities:

  • Plan, organize, schedule, review, and evaluate the work of kitchen staff.
  • Coordinate daily with Chefs des Parties, head cooks, and lead steward to ensure smooth kitchen operations.
  • Ensure all dishes meet quality, quantity, presentation, and temperature standards.
  • Train staff in kitchen operations, equipment use, safety procedures, portion control, and presentation.
  • Assist in menu development and creation, focusing on seasonal availability.
  • Help establish and maintain the kitchen budget.
  • Communicate with the Restaurant Manager about VIPs and special arrangements in the Executive Chef's absence.
  • Monitor banquet function sheets and clarify changes with the chef.
  • Attend BEO and Pre-con meetings in the Executive Chef’s absence.
  • Adhere to hygiene and safety requirements, ensuring ill or injured staff are appropriately managed.
  • Manage stock orders, conduct regular stock checks, and ensure proper storage conditions.
  • Resolve customer complaints and queries satisfactorily.
  • Stay updated on industry trends and practices.

Qualifications:

  • High School Diploma/GED supplemented by formal culinary coursework.
  • Minimum of three (3) years of experience as a journey-level cook, or an equivalent combination of education, training, and experience.
  • Strong knowledge of employee supervision, cooking techniques, food and beverage products, and kitchen safety and sanitation.
  • Proficient in budgeting, inventory management, and customer service.
  • Excellent communication skills and ability to work with diverse individuals.
  • Ability to read, understand, and follow recipes and instructions.
  • Strong organizational skills and ability to meet critical deadlines.
